I found this appetizer recipe on Pinterest and made it into a meal for my family.
Ingredients: 3 tubes of Pillsbury Biscuits – 3 tubes, 2 lbs of hamburger meat, taco seasoning, 1/4 cup of water, shredded cheddar cheese, 1/2 tsp. garlic powder or salt, 1/2 stick of butter, small bundle of cilantro.
1. Preheat oven to 425 degrees. Lightly spray a cookie sheet & set aside.
2. Make your taco meat – Cook the hamburger until brown. Add 3 Tbs. of taco seasoning and mix in 1/4 c. of water. Set aside.
3. Roll our each biscuit with a rolling pin. Put a spoonful of the seasoned taco meat and shredded cheese in the middle of the biscuit. Fold the biscuit over and pinch the seams creating a ball.
4. Place the ball seam down on the cookie sheet. Repeat with the remaining balls.
5. Combine 1/2 stick of melted butter with garlic salt or powder with finely chopped cilantro into a small dish. Brush the tops of balls with butter mixture.
6. Cover with foil (to avoid the tops from burning). Bake for 25 – 30 minutes on bottom shelf or until tops are golden brown.
Allow taco cheese bombs to cool a little, just a little, and then serve ‘em up warm. I liked dipping them in salsa, son liked them with Spicy Ranch dressing, and my daughter liked them as is.
I think if I make them again, I would place the balls in cupcake tins to make sure the biscuits cooked throughly. No one likes doughy tasting biscuits.
